Spelt berries are a nutty, easier to digest grain that works as a hearty substitute for rice. Hildegard’s Spelt Berries contain a more fragile gluten structure that is easier to digest and suitable for people with mild gluten sensitivity. To prepare, combine 3 cups of boiling water with one cup of Spelt Berries and simmer for 40-50 minutes.
