Anyone attempting to make veggie burgers at home knows the challenge of holding all of the vegetables together in a patty form. The spelt in our veggie spelt burger helps retain the form of a hamburger. And because of its properties as an ancient grain, spelt may be more suitable for people experiencing mild gluten sensitivity.
Here’s our take a delicious, gluten conscious, homemade veggie spelt burger, as inspired by Hildegard of Bingen.
Ingredients: Veggie Spelt Burger
- 1 cup water with vegetable broth
- 1/2 cup spelt flour
- 4 onions, chopped
- 1 cup carrots, peeled and chopped fine
- 1 cup celery, chopped fine
- 1 cup zucchini, chopped fine
- 4-6 garlic gloves
- 4 eggs
- 3 tsp oregano
- 1 tsp thyme
- Seasonings: salt, pepper, galangal, nutmeg, pellitory, fenugreek, fresh herbs, chopped parsley, dill, chives, coconut oil
Directions
Bring the water to boil in a saucepan, and add the seasoning. Stir in the spelt flour and cook to a think consistency. Allow to cool. Braise onions slightly in coconut oil. Add carrots, celery and zucchini. Stir, cover and steam (al dente) without heat. Chop the garlic cloves and mash with salt. Put everything in a large bowl, stir in the eggs and seasoning and mix well. Add fresh herbs. Heat oil in a frying pan (medium heat). Form the mixture into patties and fry on each side until golden brown.
