This is a simple and delicious spelt, sweet potato cookies recipe, with chocolate chips, inspired by Hildegard of Bingen.
Spelt, Sweet Potato Cookies Recipe
Ingredients:
- 1.5 large sweet potatoes – peeled, steamed and mashed
- ½ cup sweet unsalted butter
- ¼ cup coconut oil
- 3 eggs
- 2 ¼ cups of spelt flour
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ cup of brown sugar
- 1 cup of chocolate chips
- 2 tsp vanilla
Steam sweet potatoes (quickly do so in a pressure cooker).
Place parchment paper on a cookie sheet.
Mix together mashed sweet potatoes, butter, coconut oil and eggs until creamed. Add vanilla and sugars.
Sift together flour, baking soda and cinnamon.
Once wet ingredients are combined, slowly add dry ingredients. Once combined, add chocolate chips.
Cool batter in refrigerator for 20 minutes and preheat oven to 375 F.
Spoon cookies onto cookie sheet and bake for 12 minutes. Once baked, remove and let stand on cookie sheet for 5 minutes or so. Then complete cooling on a cooling rack.
