Cocoa Nib, Seed and Cherry Bars

These energy bars provide healthy, sustainable energy for hours. The crunchy consistency tastes delicious, while the oats are good for the heart. They are fast and easy to make, and the anthocyanins in the cherries will leave you with a “happy-brain”.

1 ¼ rolled oats, toasted

¾ cup Brazil nuts, roughly chopped

2 T chia seeds

¼ cup sunflower seeds

3 T cocoa nibs

¾ cup dried cherries

½ cup crystallized ginger

½ cup unsweetened coconut flakes

6 T agave syrup

½ cup sunflower or nut butter

Preheat oven to 350 F

In a food processor, pulse oats, Brazil nuts, chia and sunflower seeds, cocoa nibs, dried cherries and ginger until finely chopped. Fold in coconut flakes, then add the agave and sunflower/nut butter, mixing to combine. Pour the mixture into a square or small rectangular pan. Press to flatten and level the top and bake for 20 minutes. Cool and cut into bite-sized squares or bars.
